Let's Bake: Mocha Muffins

Hello Everyone!
This is my very first baking post so I’m just going to see where this goes!
Now, I love baking but I haven’t had the chance to make anything in quite some time. It was my friends birthday a couple of weeks ago and so I grabbed that excuse with both hands! You should probably know however, that I have a tendency not to use recipes… Which honestly isn’t the best idea but, it usually ends up that way even when I intend to use one!
My friend’s favourite cake is chocolate and she also loves coffee (as do I!) So, I started off by thinking I would make a chocolate cake, then I thought Muffins would be better as I planned to take them to college the next day and its easy than dealing with plates ect. (I also thought it might be a nice way to make the day a little better foe everyone as we all had our first audition of this season that next day as well.)
While I improvised the recipe it ended up as something like this:


Mocha Muffins

Frosting:

100g of butter

200g icing sugar

1 teaspoon of caramel syrup

1 packet of milk chocolate chips

  • 4 Cups of Self-raising flour
  • 2 Large Eggs
  • 1 Cup of caster sugar
  • 100g of butter
  • A splash of milk
  • 3 tablespoons of … oil
  • 7 tablespoons coca
  • 2 tablespoons of instant coffee granules
  • 1 teaspoon of cinnamon

To start I pre-heated the oven to 150 degrees and then sieved the estimated amount of flour into a bowl.

I then added the butter and sugar into a separated bowl before beating it until it was smooth. ( I know Muffins don’t actually need butter but, I hadn’t fully decided what I was making by this point and yes I do realise how strange that sounds as I’m writing it…)

 
I continued by beating in the eggs and then added the milk, oil and cinnamon before mixing it all together. I chose to make one muffin without any chocolate; one of my friends is currently on a self-inflicted chocolate ban (I have no clue how she does it!)Subsequently, I made this one first before adding the coca and putting half of that mixture into the cupcake cases. Next, I added the coffee to the remaining mixture before casing up the rest.  I placed two tablespoons of mixture into each case with the chocolate ones in one tray and the mocha in another before placing them all in to a pre- heated oven of 150 degrees.
While I waited 20 minutes for them to bake I made the frosting. This is my favourite part of baking anything! I measured out the butter (the only part of the recipe I felt I should actually check for some reason.) Then I mixed it with the back of a spoon until smooth, before adding the icing sugar. If I’m being completely honest I just added all of the icing sugar that was left in the box and  guessed how much it might be from how much what was remaining of a 400g box – although I did sieve it. Finally, I finished by adding a whole packet of milk chocolate chips!

I waited for them to cool down before decorating half with the chocolate chip butter frosting and leaving the remaining plain. It equated to 21 muffins which is an odd number but that’s what I get for not following a recipe!
